Thin slices of firm, ripe tomatoes in an onion-rubbed bowl, tossed in a simple dressing of oil, vinegar, salt, pepper and parsley. From Erken & Steen 1900.

Tomat var fortsatt en relativt ny grønnsak i norske kjøkken rundt år 1900, og en enkel tomatsalat med olje og eddik regnes som en tidlig oppskrift. Fra «Kogebog for skole og hjem» (1900) av Henriette Schønberg Erken og Caroline Steen.
Slice the tomatoes
Wash and dry ripe, firm tomatoes and cut them into thin slices.
Rub the bowl with onion
Cut the onion and rub the inside of a salad bowl with it for a hint of onion flavour. Place the tomato slices in the bowl.
Mix the dressing
Stir together oil, vinegar, salt, pepper and the finely chopped parsley, and pour the dressing over the tomatoes.
