Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Creamed sorrel (common sorrel) from «Kogebog for skole og hjem» (1900): common sorrel is boiled, squeezed dry and chopped, folded into a roux-based milk sauce with mace and seasoned with vinegar and sugar.

Engsyre var en vanlig vill grønnsak som ble sanket og stuet på lik linje med spinat. Den naturlige syrligheten balanseres her med melk, sukker og muskatblomme til en mild stuing.
Boil the sorrel
Wash and clean the sorrel and place it in boiling, salted water. Boil it, squeeze the water out well and chop the sorrel finely.
Make the sauce
Melt the butter, stir in the flour and thin with the milk or cream. Bring it to a boil.
Stir together
Add the mace and the chopped sorrel, and bring it to a boil again.
Season
Season with vinegar and sugar before serving.
