Original 1900 recipe

Creamed celeriac from «Kogebog for skole og hjem» (1900): celeriac is boiled tender, pressed into a purée, and folded into a roux-based sauce made from butter, flour and celeriac water, sprinkled with parsley.

Knollselleri gir en aromatisk puré som her løftes til en stuing med oppbakt saus. Selleri var på 1900-tallet mer brukt som smakssetter og rotgrønnsak enn i dag, og denne retten viser den som selvstendig tilbehør.
Boil the celeriac
Peel, wash and cut up the celeriac roots. Boil them tender in boiling, salted water.
Make the purée
Press the boiled celeriac through a sieve into a smooth purée. Reserve 2 dl of the cooking water.
Make the sauce
Melt the butter, stir in the flour and thin with the 2 dl of celeriac water. Bring it to a boil.
Stir together
Stir the celeriac purée into the sauce, bring it to a boil again and sprinkle the finely chopped parsley over.
