The soaked head is put over the fire in boiling, salted water with the rind down, and boils for 1 hour.
The head is taken out, and the rind is carefully cut away; it is laid at once with the rind side down over a cloth that has been wrung out in hot water and placed in a large round dish.
The head, meanwhile, continues to boil, now with the bone side down, for 2 hours. Taken out, cut from the bones, and the meat is cut into thin slices.
Fat and lean are laid in layers on the rind, the spices sprinkled between, the towel is wrapped tightly together, tied at both ends, and the sylte boils for 0.5 hour in the stock, is placed in the press and stays there until the next day.
By then you have ready a boiled, cold brine of 1 l salt, 8 l water. The sylte is placed in this with the cloth on; after one week it is suitably salted for use. Do not let it freeze.
