The roast is washed and left overnight in vinegar and water.
The roast is dried and rubbed with the mixed pepper and salt.
The butter is browned in an iron pot; the meat is now browned in it on all sides, the boiling water is added, and it simmers gently, covered, for 1½ hours.
The sauce: Butter and flour are browned slowly, thinned with the strained and skimmed stock and the cream, simmered for 10 min., and sugar and vinegar added.
You may also place the roast in freshly strained milk and let it stand until the milk turns sour (2 days); once the meat is browned, thin with the sour milk, cream and water.
Besides beef, you may also use horsemeat, game or whale meat.
