The meat is cut from the bone, the skin removed; with a knife make an incision in each end of the tenderloin; take a rolling-pin handle and carefully bore a hole through the tenderloin lengthwise; fill this with the cooked, finely cut prunes and the raw, wafer-thin sliced apple slices; when it is well filled, sew both holes shut.
The tenderloin is rubbed with the mixed pepper and salt, browned in a pan in the butter, thinned with the boiling water, set in the strongly heated oven for 0.75 hour, and basted often.
The sauce: Brown the butter and flour well, thin with the strained juices, simmer for 5 min., add the mustard stirred out in a little of the sauce.
At serving, the tenderloin is cut into slices, which are laid back together as for a whole tenderloin. Serve with vegetables, fried potatoes, cooked prunes, and apples.
