The meat is washed in lukewarm water and cooked half-done in boiling water with the leek and spices added.
Take the meat up and cut it into suitably sized pieces for serving. Brown the pieces in butter, thin with the stock, and cook until done.
The cleaned carrots and white roots are cut into strips, browned in butter, and cooked tender in a little of the mutton stock. Serve on the same dish as the meat.
Rice cooked in mutton stock is also good with this, or parboiled pressed barley grains.
