Butter and flour are browned slowly, thinned little by little with the meat stock, and brought to the boil.
The finely cut meat — leftovers of all kinds of roasted or boiled meat — and the cayenne are added, brought to the boil again, salted to taste, and filled into a mould.
The cooked, cold potatoes are pressed through a sieve, and the melted butter, potato starch, salt and eggs stirred in; everything is worked well together and laid as a lid over the meat in the mould.
Brush with egg and sprinkle with crushed rusk. Bake in the oven ½ hour. Serve in the mould.
