The washed peas are set over the heat in the cold water, and the cleaned, chopped vegetables are added.
Boil for 3—4 hours, press through a colander or purée sieve, bring back to the boil, add pepper and salt to taste, and as the soup is about to be served, stir in the chopped parsley.
Toasted bread or meatballs can be served in the soup.
NB. Since this soup requires long cooking, save fuel by using a hay box or cooking in paper.
You get an excellent, tasty and nourishing soup without needing a trace of meat stock in the house. If the soup becomes too thick after pressing, you can thin it with a little boiling water.
