Clean and wash the freshly caught saithe, cut along the bone and scrape the flesh from skin and bone.
Sprinkle with fine salt and a little white pepper, and mince it fine with a mincing knife.
Mix with 1–2 beaten eggs and 2 tablespoons of sour cream, and stir in finely chopped parsley or chives.
Shape flat, round cakes and fry them slowly until cooked through (too high a heat gives dry cakes, done on the outside and half-raw within).
Serve with browned butter, or with leftover pan sauce with small dice of pickled cucumber added.
