Cut the saithe open along the backbone as for scraping. The two boneless fillets are used for the steak.
Cut these into neat, diagonal slices, but so that the skin does not come with them.
What remains on the bone and skin is scraped off with a knife and formed into small, round cakes.
These are fried exactly like meat cakes with onion on top.
When they are well browned on both sides, pour a little of the fish stock, boiled from skin and bones, onto the pan, and they now fry gently for about a quarter of an hour while you baste now and then with the stock.
The whole saithe steak is fried the same way.
