A large halibut is boiled, and the flesh is removed from the bone in as large pieces as possible. Keep it warm, preferably over a steaming pot of water.
On the serving dish arrange layers of fish, shrimp, asparagus, lobster, with fish on top.
Between each layer, and finally to cover the whole dish, ladle over the sauce.
Sauce: melt the butter, stir in the flour, thin with the stock and the milk, the mustard and salt to taste. Let the sauce boil a couple of minutes, lift it off the heat and whisk in the 4 well-beaten egg yolks, the rest of the butter, and lemon juice to taste.
The dish looks much like an oval cushion. Garnish the dish with plenty of parsley and lemon slices. Serve the sauce alongside.
