The fish is cleaned, cut from the bone, from the tail and upwards. The skin is flayed off, and the fish is divided into several smaller pieces.
The bottom of a plate is greased with melted butter, the fish is laid on it; sprinkle with a level teaspoon of salt and a few drops of lemon juice, which makes the fish whiter and better.
A piece of greaseproof paper (parchment) is laid over the fish, and another plate is inverted over the whole.
The two plates are set over a pot of boiling water, and in 20 to 25 min. the fish is cooked. The water in the pot must boil the whole time.
When serving, you can pour a little melted butter over the fish and sprinkle on a little finely chopped parsley.
