Skin and wash the eel, cut it into 2-inch lengths and boil in salted water, skim, and pour over a wine glass of vinegar.
Arrange the pieces in a warmed dish.
Melt a slice of butter in a pot, stir in a tablespoon of wheat flour and thin, little by little, with the eel stock until the sauce is suitably thick.
When the sauce has boiled for a couple of minutes, add a teaspoon of lemon juice or a glass of dry white cooking wine, a little more salt and 1–2 beaten egg yolks (or 0.5 teaspoon egg powder dissolved in a spoonful of water and whisked in as the sauce boils up).
Arrange the eel pieces neatly on a flat dish, pour the sauce over and sprinkle with finely chopped parsley.
