Take all the good meat out of the shells. If the lobster pieces are too large, cut them up a little.
For 1 litre cream-milk take two full tablespoons wheat flour and a good slice of butter. This is whisked well together until it comes to a boil.
Add a little salt, 1 full tablespoon sugar, a little nutmeg and a trifle of cayenne, along with 3-4 tablespoons of the stock boiled from the lobster's shells and legs.
Add the lobster, and stir it carefully, so it does not settle on the bottom and does not break apart.
In the dish it is finished with 0.5 tablespoon vinegar and a good wineglass of sherry or other wine.
The stock from the shells is obtained by crushing these and the legs fairly fine, and boiling them together with the coarse, exterior roe for 15 to 20 minutes in water with a little salt. Strain it and use the stock in fish sauce, in creamed lobster and in fish soup. It gives a good lobster flavour.
