Pick fully ripe rowanberries from the stalks, crush them, pour 3 dcl. water over them, let stand overnight, boil, and strain through the jelly cloth.
For each litre of juice, 1 kg. sugar.
Moisten the sugar, boil it, add the juice, boil, skim, and when no more scum appears the jelly is usually done.
You can test this by dripping drops onto a plate: if the drop lies heavy and clear, the jelly is done.
Pour it into dry, warm jars.
When the jelly is completely cold, lay a piece of parchment paper brushed with oil directly over the preserve to prevent mould from forming.
