Original 1941 recipe

The flour, which may be potato starch, rice flour, or preferably a flour that makes the sauce clear, e.g. arrowroot flour, is stirred with the water a little at a time, cooked until it thickens — but stir, it takes no time — cooled a little, and the whisked butter is added, along with salt to taste and a few drops of lemon juice.
The butter must be kept soft until it is served.
If you lack whole fresh lemons, you can use citric acid. Dissolve a tablespoon of citric acid in ½ liter of boiling water. This mixture is excellent for use in food instead of vinegar. Drops of lemon oil must be used with caution in all hot food.
