Verbatim from "Good, cheap daily fare" (1941) – frugal wartime cooking.

Butter and flour browned slowly into a roux, thinned with meat stock or potato water, simmered and seasoned, then enriched with cream (preferably soured). A tip suggests keeping oven-toasted flour ready for sauces and soups. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Make the brown sauce
Brown the butter and flour slowly over low heat or in a moderate oven; thin with the stock once the roux is nicely browned. Simmer for 5 minutes and season to taste. Add the cream, preferably soured if possible. Toast the flour to a nice brown on a tray in the oven; it is handy to keep a batch ready for sauces and soups.
