Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Real mayonnaise from 1900: 1 egg yolk stirred with salt until stiff, about 2 dl oil added drop by drop, 1 tsp vinegar, white pepper. If it separates, start over with a new yolk. A raw emulsion.

Klassisk kald, emulgert majones bygget på råegg og olje, slik den ble laget for hånd rundt 1900. Krever tålmodighet: oljen må i dråpevis for at emulsjonen skal holde. Fra saucekapittelet i Erken & Caroline Steens «Kogebog for skole og hjem» (1900).
Stir the yolk
Stir the egg yolk with the salt in a bowl using a wooden spoon until it is thick and stiff.
Drip in the oil
Drip in the oil drop by drop while stirring constantly, then the vinegar in the same way. Add the oil slowly enough for the mixture to stay together.
Rescue a separated mayonnaise
If the mayonnaise separates, start with a new egg yolk in a clean bowl and slowly stir the separated mayonnaise into it.
Season
Add white pepper and season to taste.
