Original 1941 recipe

The cleaned, well-washed beetroots are cut up and cooked in ½ liter of the stock until the colour is completely cooked out.
The rest of the beetroots and the celery are cut into fine strips and simmered gently in the butter, but must not be browned.
The coloured stock and the rest of the stock are added, cooked until the roots are tender, salt and pepper added to taste, and a little fruit colouring added if needed.
If you have cream, whip it stiff and place a dollop of cream in each plate. But it does fine with a little lemon added too.
