Original 1941 recipe

Cold boiled potatoes mashed and worked with flour and butter into a dough, rolled out, cut into rounds, fried in butter and sandwiched with warm apple sauce and a sprinkle of sugar. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Make the potato pancakes
Mash the cold, boiled potatoes very fine or grind them once through the mincer. Work them with the flour and butter into a dough and roll it out fairly thick. Cut the dough into rounds that fit the frying pan, and fry the cakes in butter. Sandwich them together with warm apple sauce in between and sprinkle with sugar.
