Drain the water from the freshly boiled potatoes, press or grind them and stir in the milk a little at a time, along with the melted butter and the egg yolk. Spices to taste and, last, the stiffly whisked egg white.
The batter is filled into a well-greased and coated ring mould and cooked in a water bath in a hot oven for about ¾ hour.
Turn it out onto a warm dish, and in the middle of the ring place a stew of vegetables, fish or meat. Just name the pudding after whatever it is filled with.
