The carrots are scraped, rinsed and cut into slices, the boiling stock is poured over, and the rest is added.
For the sauce, an onion is finely chopped and sweated for 5 minutes in a small spoon of butter or fat, 1 heaped teaspoon of flour is sprinkled over, a little curry and about 2 dl thin cream or stock are added, simmered gently for 10 minutes, pressed and poured through a soup strainer over the roots, simmered gently for 5 minutes over low heat and under a lid.
Serve with fried fish or meat or fried potatoes or curd cheese dishes.
