Original 1941 recipe

Spiny dogfish cut into wide pieces, salted, drained, dusted with pepper and coarse wheat meal, and fried in smoking-hot fat until a brown crust forms; served with lemon, a caper pan sauce and potatoes or salad. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Prepare and season
Cut the cleaned fish crosswise into pieces about 3 fingers wide, salt them, and let them stand about ½ hour so the moisture can draw out; dust with mixed pepper and coarse wheat meal.
Fry the fish
Put fat in the pan, and when it is smoking hot, lay in the fish. Do not turn the fish until a brown crust has formed underneath.
Plate up
Spread the pieces of fish over a warm dish, not on top of each other. Tuck a few lemon slices here and there among the fish; most people appreciate that.
Make the pan sauce
To the butter or fat in the pan add a little vinegar or lemon juice, or 1 tablespoon of capers and a little caper vinegar.
Serve
Serve with boiled potatoes, raw cabbage salad or raw grated carrots — and, for variety when the season comes, with a salad of dandelion, nettle or spinach.
