Bring the milk to a boil and sprinkle in the flakes, cooking to a porridge for about 10 minutes.
The beaten eggs, spices, the melted butter and the cooked, flaked fish are stirred quickly into the porridge, poured at once into a greased mould, which is covered with greased paper and cooked in a water bath in the oven for about 1¼ hours.
Turn it out or not, as you wish; it depends greatly on what kind of mould you have.
Serve with a white sauce with chives or chopped parsley, curry — or, if you can afford it — with a sauce as fine as butter sauce: for this, stir 1 egg yolk together with 50 g butter, add ½ dl cold water, a little salt and lemon juice to taste. Stir everything together cold and serve in a slightly deep dish. Potatoes and vegetables are served alongside.
