The cut-out fish fillets are rubbed with vinegar, left for 1 hour, cooked in a little of the stock made from the skin and bones, and arranged on a dish.
A sauce is made from butter, flour and stock until it is suitably thick, boiled for a few minutes and poured over the fish.
Around the dish are placed the cooked, neatly cut roots or cauliflower. Sprinkle with finely chopped parsley or cress.
