Original 1941 recipe

The fish is cleaned, washed, dried and cut away from the skin and bones, then placed in slightly salted milk for 1 hour.
The butter and the chopped vegetables are kneaded together. The fish is cut into slices and laid in the mould in two layers with the vegetables distributed over both layers. Sprinkle with a little salt.
Bake in a hot oven for about ¾ hour, or it can cook in a water bath on top of the stove or over a pan of boiling water. In that case, first lay a piece of greased paper over it and then a lid.
That is, no water or stock on the fish and no sauce added, just the fish liquor that forms in the mould. The fish cooks in the steam of its own water. Excellent!
