Clipfish (salted dried cod) is soaked, layered in an ovenproof dish with raw potatoes, onion, tomatoes and chili pepper, and simmered gently with butter or oil for about 1 hour until tender. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Cook the baccalao
Remove skin and bones from the fish. Soak it for at least 2 days. Cut it into suitable pieces. Layer it in an ovenproof dish with the peeled raw sliced potatoes, the sliced onion, the sliced tomatoes and the pepper. Put the butter or fat in the dish, pour in the water and set the covered dish over low heat. Shake it gently now and then so it does not stick to the bottom. Let it simmer for 1 hour or until everything is tender. If you are able to use oil, omit the butter and half the water and pour in ¼ l of rendered oil, that is: the oil should be put in a pan and simmered until it no longer sizzles.
