The cleaned herrings are placed in water overnight. Remove the skin and all bones from the herrings, and cut the herrings into small pieces.
The potatoes are cut into slices and layered with the herring in a greased, ovenproof dish. The first and last layers should be potatoes.
The flour is stirred with the beaten eggs, a little pepper is added, and it is poured over the herring in the dish.
The grated cheese is sprinkled over, and the pudding is baked in a good hot oven for about ½ hour.
Serve with melted butter mixed with a little creamy milk and with beetroot salad. Flatbread alongside.
