Clean, wash, and dry the herring, and remove the bone.
Squeeze the herring along the back a little and loosen the bone at the neck after the head and neck have been removed; the bone is now easily pulled out.
The herrings are sprinkled with a little salt, dusted with a little coarse flour, and served fairly dry; fry nicely light brown over low heat and with almost no fat, but then they must be turned or moved often.
Serve with salad, or horseradish stirred into very little milk.
