Original 1941 recipe
Verbatim from "Good, cheap daily fare" (1941) – frugal wartime cooking.

Fresh herring is ground with the skin together with boiled potatoes, onion and potato starch, thinned with milk, seasoned with pepper and a trace of ginger, and shaped into round cakes fried in a little fat. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Grind the herring
Clean fresh herring, preferably somewhat large, wash and dry it, and grind it with the skin twice, the last time together with the boiled potatoes, a little onion and the potato starch.
Season the mixture
Work the mixture a little with the spices and thin it with the milk.
Shape and fry
Shape into round, not too thin cakes that are fried in a pan in a little fat, like the herring above. A little herring fat is good.
