Original 1941 recipe

Roe, onion and potatoes are ground once, then the potato starch, the beaten egg and the rest are added, the milk last, a little at a time; if the batter is loose, you can use less milk or add a little grated bread or crushed rusk.
Everything is mixed well, and the batter is spooned into a pan containing hot frying fat or lightly browned butter or margarine, and fried until nicely browned. Serve with vegetables and potatoes.
Roe fritters or cakes can, if you have it, have 100 g of pork or suet added, in which case you omit the potato starch and milk; otherwise the same procedure.
