Original 1941 recipe

Spiny dogfish flesh is ground with salt, then twice more with cold boiled potatoes, seasoned with potato starch, pepper and ginger, thinned with milk and shaped into round cakes fried in fat or butter. From Henriette Schønberg Erken's «God, billig dagskost» (1941).

Make the fish cakes
Clean, wash, dry and scrape the fish. Grind it once together with the salt. Then grind it twice more with the boiled, cold potatoes. Stir in potato starch, pepper and ginger to taste, and add the milk little by little. Shape into round cakes and fry in fat or butter.
