The cleaned, washed and dried fish is rubbed with salt and vinegar and should sit with this for a couple of hours.
Dry it well and cook it in very little water or steam it in its own water. When it is cooked, take the fish up, free it of skin and bones, but keep it in pieces as large as possible. Do this before the fish is cold.
The vegetables are cleaned and cut into long, broad strips; the leek is cleaned well and cut crosswise into 2–3 cm long pieces. The vegetables are cooked in very little salted water.
Butter and flour are stirred together, thinned with the fish and vegetable water into a fairly smooth sauce, which is boiled for a few minutes. The vegetables are added to the sauce and seasoned to taste.
Finally the fish is added, after which the stew is thickened with the creamy milk stirred with 1 egg yolk if you have it. Heat the fish well in the sauce; it must not boil.
When serving, the stew is heaped high on the dish and around it a wreath of small boiled potatoes or boiled macaroni sprinkled with chopped parsley.
