Cut the meat and suet into small pieces and grind twice, stir in the potato starch, pepper and salt, and thin with the water little by little.
On the moist board, shape round cakes using 2 knives dipped in cold water, and score them on both sides with the knife.
Fry them nicely brown in the browned butter or hot fat; first over strong heat, then continue frying the patties over low heat and let them simmer gently under a lid for a few minutes. Turn the cakes now and then during frying.
Brown onion and serve on the same platter. For 1 kg meat you can add 200 g boiled potatoes, ground together twice; it is good and stretches the food, and then considerably less liquid is needed for thinning.
