Flour, baking soda and salt are put in the bowl, the milk is thinned in with constant stirring, and the whisked eggs and the finely snipped chives are added.
The rind is cut off the pork, which is cut into thin slices and brought to a boil, being put on in cold water. The pork slices are lightly fried in a frying pan. Set aside.
A little of the pork fat is put in the pan, and the batter, which has been poured into a jug, is poured in; not too thick; when the batter has set somewhat, pork slices are laid on, and immediately before the pancake is to be turned, a little fat is poured over.
Fried a nice golden brown on both sides and set on a warm dish. Cut into wedges when serving.
