Fresh-strained milk cooks down for several hours, until it becomes yellow and sweet.
Then curdle it with a little sour milk or rennet, and stir carefully from the bottom, so that the curds do not break up too much.
As soon as the milk has curdled into clumps, take the pot off the heat. The looser the curd, the better.
Mølse is eaten as a soup dish, and is regarded as a very good and fine dish, much used at feasts.
