4 litres of freshly strained milk are set aside until suitably sour — the milk so firm that it can be sliced up with a spoon.
Pour it into a cloth that has first been wrung out in water; tie it up and hang it over a dish so the whey can drain down into it, or you can lay a napkin over a strainer, set this over a dish and pour the milk in.
The next day, when all the whey has drained off, take the cheese left in the cloth and put it in a dish, rub it smooth with a little sugar and one dcl of whipping cream, spoon it into a bowl and eat it with rusks.
