Trim the cured or salted pork of its rind and cut it into slices. Put a little water in the frying pan and let the pork fry in it. If it is cured pork it need only fry until browned; if it is raw pork it must fry for at least ½ hour. When the fat has rendered from it, turn everything out onto a plate.
Meanwhile prepare the pancake batter in beestings with the cream on, stir in as much wheat flour as it will take, then thin with 1 to 2 pegle of ordinary sweet milk until the batter is like a thin soup, or thin enough to fry. If you like, you can put a little chopped chives in the batter.
Put a little pork fat in the frying pan. Pour a ladleful of batter over it so the whole pan is evenly covered. Lay a few pieces of pork on top.
When the pancake is light brown on the underside, put a little fat on the top side and turn the pancake in the pan. When it is brown on that side too it is done and is turned out.
