The cut mackerel fillets are turned in salt and flour and fried in hot oil, then placed on a warm dish; this must be kept so that it stays warm.
Oil is heated (hot) in the pan again, and in it a little chopped mushroom, a little chopped shallot, and a knife-point of garlic are browned; everything is browned quickly and poured over the fish.
Add a couple of spoonfuls of vinegar to the pan (carefully), and pour this over the fish as well; it should only just moisten it.
Garnish the dish with fried tomatoes, and sprinkle chopped parsley over the whole thing. Serve with vegetables.
