The fish is fully cleaned, cut into two-finger-thick slices crosswise, and put over the fire in the boiling, salted water.
Butter, flour and curry are stirred together, thinned with the strained fish stock, salted to taste; simmer gently for 5 min. The fish pieces are warmed in the sauce.
The rice is boiled in 1.5 l water with a teaspoon of salt; boil 0.5–0.75 hour; poured into a colander, rinsed with cold water; then steamed in the pot for a few minutes.
It is then placed in small moistened timbale moulds or cups and served around the fish on the platter. The dish is garnished with parsley.
