The cleaned, washed mackerel is filleted from the bone, dried, and scraped from the tail upward.
The fish meat is ground twice with the salt, the melted cold butter, and the potato starch.
Stir in a bowl until the mixture is elastic, then add the spices, the beaten egg, and the milk little by little.
The mixture should be as firm as ordinary meat forcemeat.
Shape into balls, which simmer gently for 5 min. in fish stock made from the skin, heads, and bones.
Serve the balls in brown sauce. The mixture can also be fried as patties in a pan in butter; drop the mixture straight into the pan with a spoon.
