The fish is placed in cold water for 8 days; the water is changed every day; the fish lye and the water are mixed, and the fish is placed in this for 4 days, taken out, placed in cold water that is changed often, for 2 days.
The fish is cut into somewhat large pieces and placed over the heat in boiling, lightly salted water. 1 dl salt per 2 l water. The salt is added 2 min. before the fish is to be served, if you do not want the fish to be firm.
Cook carefully and in as little water as possible. When it is placed on the warm dish, it should be "quivering", not too soft.
Browned rib fat, goose fat, pork fat or - if you have none - melted butter or white sauce is served with it; mustard must not be forgotten. Serve with green peas.
For those who have the opportunity, lye made from birch ash is best. You then take 2 l sifted ash, 1.5 dl lime, 6 l water. Everything is stirred into the water, brought to a quick boil, and clarified. When the lye is cold, it is poured over the fish. It lies in this for 2-3 days, then at least 24 hours, up to 4 days, in cold water, which is changed daily morning and evening. For lutefisk, redfish, saithe, cod, ling and cusk are used.
