The fish must be firm and white in the flesh. Cut from the bone into finger-thick slices; wiped over with a damp cloth; placed over the heat in the boiling, salted water; when it boils, skim well, and let the fish cook slowly until tender.
The fish gains in appearance, if it is not quite white, if you go to the trouble of boiling it in half milk and half water.
Serve with melted butter with finely chopped parsley in it, hollandaise sauce, caper sauce, or whipped cream with grated horseradish, sweet and sour.
Halibut can be served boiled and cold with horseradish sauce. The fish is then cooled in its stock.
