The boiled crayfish are picked from their shells.
For the mayonnaise, whisk egg yolks, salt and mustard in a large cup for a couple of minutes with a fork. Now keep stirring vigorously while the oil is poured in a fine stream, and finally the vinegar.
The crayfish are lightly mixed into the sauce, or they are placed on the dish and the mayonnaise put in large mounds on top. The head of lettuce is finely cut and arranged around it. Instead of crayfish you can use lobster or shrimp.
Crayfish are boiled live in boiling salted water; put them on in 2.5 l water, 1 dl coarse salt and a couple of sprigs of dill. Boil approx. 10 min. from when the water comes to the boil. Pour the crayfish and the cooking water at once into a tub.
