The fish is freed of skin and bones and cut into finger-thick slices, coated in the mixed flour and salt, browned in the lightly browned butter; layered in a greased dish with lemon slices.
Pour over with ¾ l stock, boiled from the fish bones and skin; sprinkle with ground rusk. Bake in a not too hot oven about ½ hour.
Haddock may be treated the same way; instead of stock, the fish is poured over with 1½ dl sour cream, dotted with small pats of butter and sprinkled with grated sharp cheese; bake in the oven ½ hour.
