The cod is cleaned whole, i.e. the fish is cleaned without opening the belly. Loosen the gills, make a cut at the vent, and loosen the gut. Carefully pull the gills out together with the entrails.
Take care that the gall bladder, which sits on the liver, does not burst; remove it carefully and discard it. Innards such as liver, roe and the milt are placed in water that is changed several times.
Wash the fish well, cut it into finger-thick slices, wash them in salted water, lay them out on a dish (preferably a perforated dish), and cover with a fish cloth until it is to be boiled.
Put on the heat in the boiling, salted water; when the water comes back to the boil, add a little cold water to stop the boiling. Put the head and tail in the pot first, then the middle pieces.
Boil the innards preferably in a separate pot in boiling, less salted water. The cooked innards are cut up and served on the fish dish or separately in the fish stock, with parsley and vinegar or lemon.
Serve piping hot, with melted butter or white sauce.
