After the fish has been opened and washed, remove the bone. Use it and the head to make a stock.
Cut the fish into slices a couple of fingers thick, with or without the skin, as you prefer.
Bread the pieces with egg and crushed rusks, or simply dip them in flour.
Then fry them a nice brown in butter and place them in a dish with a good slice of butter, a little salt, nutmeg and crushed bread or flour between the layers.
Pour over the stock mixed with a couple of glasses of hot wine, and put the dish in the oven, where it bakes gently for about half an hour.
Several other kinds of fatty fish are also good prepared this way, among them lumpfish.
