Before it is cut up, scrub the fish on both sides with salt and water to remove the oily (train-oil) taste; the fine threads running down the sides are removed.
Cut the fish into suitable pieces, soak for 1 hour in salt and water, then wipe dry with a cloth.
Put a good piece of butter in the bottom of the pie dish. Lay the fish in with crushed bread, salt, a little butter, fine white pepper, a very little shallot, beef or veal stock and 1 beer glass of good sherry.
As the fish is very watery, do not use too much stock. Oysters in the sauce are good, but by no means necessary.
Serve in the dish. The fish may also be browned before it is laid in.
