From puff pastry, cut out with a large beer glass two round cakes for each patty, which are to be laid on top of each other.
In the ones to be placed on top, make a hole with a smaller glass.
Brush the lower cake with a little egg around the edge, so the upper one with the hole sticks well to it.
They are baked light yellow.
When you are going to use them, warm them first in the oven, and fill them with warm creamed lobster, made as described above.
If you cannot bring them to the table right after the lobster is filled in, they can be put back in the oven for a little while; but they must not stand long, for then they lose their quality.
Crab, crayfish and prawns are used in the same way as lobster.
